Japanese Damascus Chefs knife
Most kitchen knives are stamped from soft stainless: they take an edge, lose it by the second service, and you spend the week pushing instead of cutting. This one starts somewhere else.
- High-carbon VG10 Japanese stainless core. Holds an edge far longer than the stainless most kitchens are issued, and you can bring it back yourself on a whetstone rather than sending it away.
- Layered Damascus over the core. The pattern comes from how the blade is built, not from a finish applied at the end, so no two are marked alike.
- Precision-ground, then hand-finished. A ground-only edge starts clean and begins tearing through the last third of the board. A hand-finished one keeps cutting.
- Reinforced bolster, full-tang style balance. Sits the weight back into your palm instead of pulling forward.
- Octagonal hardwood handle. Stays square in the hand through a long prep list, so your grip is not fighting the knife.
- Hand wash and dry immediately. Never the dishwasher, never left in the sink.
